Crunchy Stuffed Zucchini Boats

4 Medium Zucchini (6 to 8in), parboiled                    1/2tsp Dried Oregano Leaves

1/4lb U-STUFF-ITŪ Stuffing                                   2tbsp Margarine or Butter

1/2cup Mushrooms, finely chopped                          10 Unsalted Salting Crackers

1/4cup Chopped Onions                                          

1/4cup Chopped Tomatoes    

 

Preheat oven to 350°F.  Cut parboiled zucchini in half lengthwise.  Scoop out centers leaving thick shells and set aside scooped out portion for later use.   Place shells in 9in square baking dish and set aside. Chop scooped out portion of zucchini and mix with mushrooms, onions, tomatoes and U-STUFF-IT in mixing bowl.  Scoop stuffing mixture equally into zucchini shells.  Sprinkle with cracker crumbs and butter and bake in oven for 20 to 25 minutes or until heated through.
