4 Medium Yellow Squash (6 to 8 inches each),
parboiled
1/4lb U-STUFF-ITŪ stuffing
2 tbsp. Margarine or Butter, melted
10 Unsalted Saltine Crackers
Preheat oven to 350°F. Cut
washed squash in half length-wise. Scoop out centers leaving inch thick
shells. Place shells on 9-inch square baking dish. Scoop stuffing
into squash halves. Mix melted butter and cracker crumbs in mixing
bowl. Sprinkle mixture on top of stuffing and squash and place baking
sheet in oven. Bake for 20 to 25 minutes or until heated through.
