Twice Baked Stuffed Potatoes

 
4 Baking potatoes (preferably 1 pound each)
½ pound U Stuff It
½ cup jack and cheddar cheese
Butter as needed

Preheat oven to 350 degrees.  Wash potatoes, remove dirt, and bruises or bad spots. Wrap potatoes in aluminum foil and place in oven for 1 hour. Remove potatoes form oven and let potatoes stand for 5 to 10 minutes. Remove from foil and cut potatoes in halves lengthwise. Place equal parts stuffing onto potato halves and brush with melted butter. Sprinkle mixed cheese on top of stuffing and place potatoes onto oven safe sheet pan. Place in oven and cook for 10 to 15 minutes or until heated through. Remove from oven and place on serving dish. Suggestion: sprinkle with bacon crumbles and chives and serve with sour cream.
